Sheet Pan Salmon

Sheet Pan Lemon Garlic Salmon & Artichoke

Serves 2

  • 2 6oz Salmon Filets

  • 2 Cups Artichoke Hearts

  • 1 Shallot, Sliced

  • 3 Garlic Cloves, chopped 

  • 2 Tbsp Olive Oil

  • 1 tsp Lemon Zest

  • 1 Tbsp Lemon Juice

  • 1 Tbsp Capers

  • Sea Salt and Pepper

INSTRUCTIONS:

  1. Preheat oven to 425 degrees F and prepare a sheet pan with parchment paper

  2. Place the salmon filets in the center of the sheet pan

  3. Arrange the artichoke hearts and sliced shallots on the sheet pan, around the salmon filets

  4. Chop the garlic and combine with olive oil, lemon zest, and lemon juice

  5. Drizzle the garlic and olive oil combination over the salmon and artichoke hearts

  6. Add the capers over the salmon and artichoke hearts

  7. Sprinkle sea salt and fresh ground pepper over the salmon and artichoke hearts

  8. Bake at 425 degrees F for 15-20 minutes or until salmon is flakey and cooked through

  9. Serve Immediately
